  • Salsa
    12-15 med. to lg. tomatoes, skinned & chopped; 3 med. green peppers, chopped; 2 med onions, chopped; 8 oz. tomato sauce, 6 oz. tomato paste; 2 tsp salt; ground pepper to taste; few dashes ground red pepper & tabasco sauce; 1/4 to 1/2 ground cumin, or more to taste.
    Simmer 1 1/2 to 2 hours, stirring occasionally. Cool and put in containers. Can either refrigerate or freeze til ready for use. You can make it as mild or hot, depending on your taste.
    Chili's Salsa - Copy Cat Recipe 

    1 Can Original Rotel
    1 Can Whole Peeled Tomatoes (reserve juice)
    1 Tbsp + 1 Tsp Jalapenos diced
    1/4 Cup Yellow Onion diced
    1/2 - 3/4 Tsp Garlic Salt
    1/2 Tsp Cumin
    1/4 Tsp Sugar
    In food processor place jalapenos and onion and process for just a few seconds. Add both cans of tomatoes, salt, sugar and cumin. Process all ingredients until well blended but do not puree. Add liquid from whole tomatoes if needed for proper consistency. If you like cilantro, add to onions and jalapenos and process. Place in covered container and chill a couple of hours before serving for flavors to blend.
